So,

I've been thinking of making a Gruit Ale for a couple of years now, and I think I am going to just bite the bullet brew one in the next month or so. With that being said, I have never met anyone who has created a true Gruit and I was wondering if any of you ever have? I have made a fair amount of braggots and other historic beers, but Gruit seems a bit different. Does anyone have any advice?

I think Dallas made a beer with dandelions instead of hops. Does that count?

Thanks Ed. I've had that beer before and it's pretty damned awesome. I think it counts.

I checked it out, thanks again for the recommendation. I need to listen to those podcasts more often. From all I have read about Gruit Ale, the brewer he interviewed seemed to be using the same methods. I just hope my first batch doesn't turn out super horrid.

What are you leaning toward herb-wise? I'm just curious. I never did try the Dandelion ale that Red Rock did but it sounded interesting.

Kent,

I'm thinking Mugwort and Wormwood for bittering and some other fun stuff like sweet gale and licorice. Good times.

Ricky,

I have been interested in trying my hand at making a Gruit. Your choice of herbs looks tasty. What are you using as your base beer?

Dallas,

I'm going to use a black ale as a base, like 8% or so. Just my standard strong stout, maybe a little sweet. Almost like a Jager-beer, if that makes sense. Oh, and by the way the Braggot that Quinn and I brewed the day after the party at Josh and Gracies was still at high krausen 'til last night. That is a full two weeks, I think it is a mutant and will kill us all.

As always, we should brew something together. Be it a Mead or a Gruit, something a bit strange. I'll let you know when I have the beer fully figured out, it should be the beer after next.

Sounds interesting. I was thinking a Stout base would be good with your herbs of choice. I was inspired and started putting together a recipe for a Heather ale.

Heather Ale is awesome! I am such a fan of Heather no matter the base beer or mead. The "Brad the Braggart Braggot" was a Heather/lavender beer. Actually, I think I still have a lot of Heather tips laying around if you happen to want some, a little goes a fairly long way. Anyway, I'm getting pretty excited. Quinn and I just finished brewing a Wit about two hours ago, so I can smell blood on the next batch.

Also, I was making fun of Jeff about the "Knife" story you told me. He thought it was funny, and said that someone... Probably Nick, said that you like knives and that's why he showed you his.

Ricky,

Where are you getting your herbs for your Gruit? I have been looking around for Heather tips and found a web site called Wildweeds.com. You should check it out, they have good pricing and the largest selection that I have seen of hard to get herbs.

Kent,

It's the next batch, we just finished our Imperial Stout this week and the Gruit is coming very very soon. I'll let you know.

Kent,

The Black Gruit is in primary right now, just thought that I should let you know. I'm starting to think I'm driving blind on this one. I'm making potions with a couple herbs I've never even tried before, let alone brewed with. I am amazed at the bittering power of Wormwood, I have 15 grams in a couple Oz. of Vodka as an experiment, and just putting a drop of that on your tong is like beerbonging ten Imperial IPA's at once.
